
1 medium sized jicama (or 2 large Granny Smith apples) julienned
1 large carrot julienned
3 shallots thinly sliced
2 tbsp of toasted sesame seeds
1 large handful of cilantro roughly chopped
4 kaffir lime leaves cut into thin strips
1 long red chilli, seeded and cut into thin strips
Dressing:
1/4 cup of lime juice
3 tbsp of fish sauce
4 tbsp of brown sugar
1 large clove of garlic minced
Combine dressing ingredients. Toss everything together. I like to make this about an hour before eating to let it marinate.
